Secret release! We've been working on a new culture for a bit and decided to release it in homebrew first! Farmhouse Fever is our newest farmhouse culture. It includes 8 Saccharomyces strains. 6 being from Kveik strains, 1 being from the farmhouse culture Simonaitis, and the other being a Saison strain. Its partnered with 5 Brettanomyces brux strains, 1 Pediococcus pentosaceus strain, 1 Lactobacillus delbrueckii strain, 1 Pichia kudriavzevii strain and 1 Pichia anomala strain.
This culture does great for both quicker turn around sours and long term aged sours. Depending on the wort composition. Pitchable in up to 6 gallons.
Temperature tolerance - 55F-85F
Ethanol Tolerance - 12%
Attenuation - 90-100%
