More dried Kveik ahoy! Wollsaeter is a very interesting Kveik. It was recovered from a dried out barrel where a bit of the dried slurry had sat for decades. It was originally thought to be dead for sure but low and behold its alive! Wollsaeter has a very distinct melon or cantaloupe quality to it as well as a citrus like quality as well. It shows light signs of caramel notes and some grassy notes, but those are generally very subdued. This culture contains a Lactobacillus species so if no hops are used it will sour the beer but only to a tart level of acidity. The tolerance of this Lacto is around 5-10 IBU.

Temperature Range - 70-100F (90F is its ideal spot)

Ethanol Tolerance - 13% ABV
